Description

A quick and flavorful 30-minute steak dinner featuring perfectly seared steak with a simple pan sauce and a fresh side, ideal for a satisfying weeknight meal.


Ingredients

  • 2 ribeye or sirloin steaks (about 250g each)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 garlic cloves, smashed
  • 2 sprigs fresh thyme or rosemary
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 cup beef broth
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1 tbsp chopped parsley (optional)
  • 1 cup green beans or asparagus (side)
  • 1 tbsp olive oil (for vegetables)


Instructions

  1. Pat the steaks dry with paper towels and season generously with salt and black pepper on both sides.
  2. Heat olive oil in a large skillet over high heat until very hot.
  3. Add the steaks and sear for 3–4 minutes per side for medium-rare, adjusting time to desired doneness.
  4. Add butter, garlic, and herbs to the pan, then baste the steaks with the melted butter for 1–2 minutes.
  5. Remove steaks from the pan and let them rest for 5 minutes.
  6. In the same pan, reduce heat to medium and add beef broth, Dijon mustard, and Worcestershire sauce. Stir and simmer for 2–3 minutes until slightly thickened.
  7. Meanwhile, sauté green beans or asparagus in olive oil for 5–7 minutes until tender-crisp.
  8. Slice the steak if desired, drizzle with pan sauce, and garnish with parsley.
  9. Serve hot with the sautéed vegetables on the side.
