Description

Soft, fluffy baked donuts bursting with juicy blueberries and topped with a light glaze, perfect for breakfast or a sweet snack.

Ingredients

  • 2 cups all-purpose flour
  • 2/3 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 3/4 cup buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blueberries
  • 1 cup powdered sugar (for glaze)
  • 23 tbsp milk (for glaze)
  • 1/2 tsp vanilla extract (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a donut pan.
  2. In a large bowl, whisk flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk buttermilk, eggs, melted butter, and vanilla until smooth.
  4. Gently fold wet ingredients into the dry mixture until just combined. Do not overmix.
  5. Fold in blueberries.
  6. Spoon or pipe batter into the donut pan, filling each cavity about 2/3 full.
  7. Bake for 12–15 minutes, or until a toothpick inserted comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. For the glaze: whisk powdered sugar, milk, and vanilla until smooth. Dip cooled donuts into the glaze and let set before serving.

Notes

  • Use frozen blueberries straight from the freezer to prevent bleeding color.
  • For extra flavor, add lemon zest to the batter.
  • Store in an airtight container for up to 3 days.
