Description
Soft, fluffy baked donuts bursting with juicy blueberries and topped with a light glaze, perfect for breakfast or a sweet snack.
Ingredients
- 2 cups all-purpose flour
- 2/3 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 3/4 cup buttermilk
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1 tsp vanilla extract
- 1 cup fresh or frozen blueberries
- 1 cup powdered sugar (for glaze)
- 2–3 tbsp milk (for glaze)
- 1/2 tsp vanilla extract (for glaze)
Instructions
- Preheat oven to 350°F (175°C) and grease a donut pan.
- In a large bowl, whisk flour, sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk buttermilk, eggs, melted butter, and vanilla until smooth.
- Gently fold wet ingredients into the dry mixture until just combined. Do not overmix.
- Fold in blueberries.
- Spoon or pipe batter into the donut pan, filling each cavity about 2/3 full.
- Bake for 12–15 minutes, or until a toothpick inserted comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- For the glaze: whisk powdered sugar, milk, and vanilla until smooth. Dip cooled donuts into the glaze and let set before serving.
Notes
- Use frozen blueberries straight from the freezer to prevent bleeding color.
- For extra flavor, add lemon zest to the batter.
- Store in an airtight container for up to 3 days.
