Baked Potato with Garlic Butter Steak Bites is the ultimate comfort food combo — tender, juicy steak bites seared to perfection and tossed in rich garlic butter, served over fluffy baked potatoes with melty cheese and fresh herbs. It’s hearty, flavorful, and restaurant-quality right at home.


Ingredients

  • 4 large russet potatoes
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 1 1/2 lbs sirloin or ribeye steak, cut into 1-inch cubes
  • 2 tbsp butter (for searing steak)
  • 3 cloves garlic, minced
  • 2 tbsp unsalted butter (for garlic butter sauce)
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried)
  • 1 tsp fresh parsley, chopped
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup shredded cheddar cheese (optional, for topping)
  • 1/4 cup sour cream (optional, for serving)


Instructions

  1. Preheat oven to 425°F (220°C). Scrub potatoes clean, poke several holes with a fork, and rub with olive oil and salt. Place directly on the oven rack and bake for 45–60 minutes, until tender inside and crispy outside.
  2. While potatoes bake, pat steak cubes dry with paper towels and season with salt and black pepper.
  3. Heat a large cast-iron skillet over medium-high heat. Add 2 tbsp butter and once hot, sear steak bites in batches for 1–2 minutes per side until browned and cooked to your liking. Remove and set aside.
  4. In the same skillet, reduce heat to medium and add remaining butter, minced garlic, thyme, parsley, and red pepper flakes. Stir for 30 seconds until fragrant.
  5. Return steak bites to the skillet and toss in the garlic butter until coated.
  6. When potatoes are done, slice them open and fluff the insides with a fork. Top with cheese (if using) and a scoop of garlic butter steak bites.
  7. Drizzle with extra garlic butter from the pan and top with sour cream or additional herbs if desired. Serve immediately.
