Ingredients
- 4 large russet potatoes
- 2 tbsp olive oil
- Salt and black pepper, to taste
- 1 1/2 lbs sirloin or ribeye steak, cut into 1-inch cubes
- 2 tbsp butter (for searing steak)
- 3 cloves garlic, minced
- 2 tbsp unsalted butter (for garlic butter sauce)
- 1 tsp fresh thyme leaves (or 1/2 tsp dried)
- 1 tsp fresh parsley, chopped
- 1/4 tsp red pepper flakes (optional)
- 1/2 cup shredded cheddar cheese (optional, for topping)
- 1/4 cup sour cream (optional, for serving)
Instructions
- Preheat oven to 425°F (220°C). Scrub potatoes clean, poke several holes with a fork, and rub with olive oil and salt. Place directly on the oven rack and bake for 45–60 minutes, until tender inside and crispy outside.
- While potatoes bake, pat steak cubes dry with paper towels and season with salt and black pepper.
- Heat a large cast-iron skillet over medium-high heat. Add 2 tbsp butter and once hot, sear steak bites in batches for 1–2 minutes per side until browned and cooked to your liking. Remove and set aside.
- In the same skillet, reduce heat to medium and add remaining butter, minced garlic, thyme, parsley, and red pepper flakes. Stir for 30 seconds until fragrant.
- Return steak bites to the skillet and toss in the garlic butter until coated.
- When potatoes are done, slice them open and fluff the insides with a fork. Top with cheese (if using) and a scoop of garlic butter steak bites.
- Drizzle with extra garlic butter from the pan and top with sour cream or additional herbs if desired. Serve immediately.
