A hearty and comforting meal featuring crispy-skinned baked potatoes topped with tender, garlicky butter steak bites for a simple yet indulgent dinner.
Ingredients
- 4 large russet potatoes
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 1/4 lbs sirloin steak, cut into bite-sized pieces
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp onion powder
- 1/2 tsp salt (for steak)
- 1/4 tsp black pepper (for steak)
- 1 tbsp fresh parsley, chopped
- Sour cream, for serving (optional)
- Shredded cheddar cheese, for topping (optional)
Instructions
- Preheat oven to 425°F (220°C). Scrub potatoes, pat dry, rub with olive oil, and season with salt and pepper. Place directly on oven rack and bake for 50–60 minutes until tender.
- Season steak bites with paprika, onion powder, salt, and pepper.
- Heat a skillet over medium-high heat with a splash of oil. Add steak in a single layer and sear for 2–3 minutes per side until browned.
- Add butter and garlic to the pan and toss the steak bites until coated and fragrant, about 1 minute. Remove from heat and sprinkle with parsley.
- Once the potatoes are cooked, slice open and fluff the inside with a fork.
- Top each baked potato with garlic butter steak bites, then finish with sour cream or shredded cheese if desired.
Notes
- For crispier skin, bake potatoes on a baking sheet lined with coarse salt.
- Use ribeye for extra tenderness.
- Add sautéed mushrooms or caramelized onions for more flavor.
