Description
Baklava Cheesecake Sandwich Cookies combine soft spiced cookies inspired by baklava flavors with a creamy cheesecake filling, layered with honey, nuts, and warm spices for a rich, bakery-style dessert.
Ingredients
- 2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 2 tsp vanilla extract
- 1/2 cup finely chopped walnuts or pistachios
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tbsp honey
- 1/2 tsp lemon zest
- 1–2 tbsp milk (if needed)
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
- Add egg and vanilla extract, mixing until combined.
- Gradually mix in the dry ingredients, then fold in chopped nuts.
- Scoop tablespoon-sized portions of dough onto prepared baking sheets, spacing them apart.
- Bake for 10–12 minutes until edges are lightly golden. Cool completely.
- For the filling, beat cream cheese, powdered sugar, honey, and lemon zest until smooth. Add milk if needed for spreading consistency.
- Spread or pipe cheesecake filling onto the flat side of half the cookies.
- Top with remaining cookies to form sandwiches. Chill for 30 minutes before serving.
Notes
- Pistachios give the most authentic baklava flavor.
- Drizzle extra honey on the filling for added sweetness.
- Store refrigerated in an airtight container.
