Description

Baklava Cheesecake Sandwich Cookies combine soft spiced cookies inspired by baklava flavors with a creamy cheesecake filling, layered with honey, nuts, and warm spices for a rich, bakery-style dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1/2 cup finely chopped walnuts or pistachios
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tbsp honey
  • 1/2 tsp lemon zest
  • 12 tbsp milk (if needed)


Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add egg and vanilla extract, mixing until combined.
  5. Gradually mix in the dry ingredients, then fold in chopped nuts.
  6. Scoop tablespoon-sized portions of dough onto prepared baking sheets, spacing them apart.
  7. Bake for 10–12 minutes until edges are lightly golden. Cool completely.
  8. For the filling, beat cream cheese, powdered sugar, honey, and lemon zest until smooth. Add milk if needed for spreading consistency.
  9. Spread or pipe cheesecake filling onto the flat side of half the cookies.
  10. Top with remaining cookies to form sandwiches. Chill for 30 minutes before serving.

Notes

  • Pistachios give the most authentic baklava flavor.
  • Drizzle extra honey on the filling for added sweetness.
