Description

Soft, fluffy cinnamon rolls infused with the sweet flavor of ripe bananas, combining the comfort of banana bread with the indulgence of classic cinnamon rolls.


Ingredients

  • 2 ripe bananas, mashed
  • 3 cups all-purpose flour
  • 1/4 cup sugar
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1/2 cup warm milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup brown sugar (for filling)
  • 2 tsp cinnamon (for filling)
  • 3 tbsp softened butter (for filling)
  • 4 oz cream cheese (for frosting)
  • 2 tbsp butter, softened (for frosting)
  • 1 cup powdered sugar (for frosting)
  • 1/2 tsp vanilla extract (for frosting)
  • 12 tbsp milk (for frosting)


Instructions

  1. In a small bowl, combine warm milk, yeast, and 1 tbsp sugar. Let sit for 5–10 minutes until foamy.
  2. In a large bowl, mix mashed bananas, melted butter, remaining sugar, egg, and salt until smooth.
  3. Add the yeast mixture to the banana mixture and stir to combine.
  4. Gradually add flour and cinnamon, mixing until a dough forms. Knead for 5–7 minutes until smooth and elastic.
  5. Place dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
  6. Roll dough into a rectangle about 1/4-inch thick.
  7. Spread softened butter evenly over the dough, then sprinkle brown sugar and cinnamon.
  8. Roll tightly into a log and cut into 9–12 rolls.
  9. Place rolls in a greased baking pan, cover, and let rise for 30 minutes.
  10. Bake at 350°F (175°C) for 25–30 minutes until golden brown.
  11. While baking, make frosting by beating cream cheese, butter, powdered sugar, vanilla, and milk until smooth.
  12. Spread frosting over warm rolls before serving.

Notes

  • Use very ripe bananas for the best flavor and sweetness.
  • Can substitute whole wheat flour for part of the all-purpose flour for a heartier texture.
