Ingredients
- 1 cup mashed ripe bananas (about 2 large bananas)
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 1/2 cups rolled oats
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the mashed bananas, egg, and vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in oats, nuts, and chocolate chips if using.
- Drop spoonfuls of dough onto prepared baking sheets, leaving space between each cookie.
- Bake for 10–12 minutes or until edges are lightly golden.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

- Use very ripe bananas for maximum sweetness and flavor.
- Cookies can be stored in an airtight container at room temperature for up to 4 days.
- For a healthier option, reduce sugar slightly and add extra oats.
