Ingredients

  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 cup chopped walnuts
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup heavy whipping cream


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a bowl, whisk flour, baking soda, salt, and cinnamon.
  3. In another bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add eggs one at a time, then mix in vanilla and mashed bananas.
  5. Stir in sour cream, then gradually add dry ingredients.
  6. Fold in chopped walnuts.
  7. Pour batter into prepared pan and bake for 40–45 minutes until a toothpick comes out clean.
  8. Allow cake to cool completely.
  9. Beat cream cheese and powdered sugar until smooth.
  10. In a separate bowl, whip heavy cream to stiff peaks.
  11. Fold whipped cream into cream cheese mixture.
  12. Spread frosting over cooled cake, slice, and serve.
