Ingredients
- 1 lb ground beef
- 1 cup long-grain white rice, uncooked
- 2 cups beef broth
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 cup milk
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp black pepper
- 1 tsp salt
- 1/2 tsp dried thyme
- 1/2 cup frozen peas or corn (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it up as it cooks.
- Add diced onion and garlic to the beef and sauté until softened.
- Season with salt, pepper, paprika, and thyme. Remove from heat.
- In a bowl, combine uncooked rice, beef broth, milk, sour cream, and butter.
- Stir in the cooked beef mixture and optional vegetables.
- Transfer the mixture to a greased baking dish and cover with foil.
- Bake for 35 minutes, then remove foil and sprinkle cheddar cheese evenly on top.
- Return to the oven uncovered and bake for an additional 10–15 minutes until rice is tender and cheese is melted.
- Let rest for 5 minutes before serving.
Notes
- Use sharp cheddar for a stronger cheese flavor.
- Brown rice can be used but will require extra liquid and cooking time.
- Add mushrooms or bell peppers for extra vegetables.
