Beef and Rice Casserole with Creamy Cheddar is a hearty, comforting baked dish made with seasoned ground beef, tender rice, and a rich, cheesy cheddar sauce—perfect for an easy family dinner.


Ingredients

  • 1 lb ground beef
  • 1 cup long-grain white rice, uncooked
  • 2 cups beef broth
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 cup milk
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1/2 tsp dried thyme
  • 1/2 cup frozen peas or corn (optional)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it up as it cooks.
  3. Add diced onion and garlic to the beef and sauté until softened.
  4. Season with salt, pepper, paprika, and thyme. Remove from heat.
  5. In a bowl, combine uncooked rice, beef broth, milk, sour cream, and butter.
  6. Stir in the cooked beef mixture and optional vegetables.
  7. Transfer the mixture to a greased baking dish and cover with foil.
  8. Bake for 35 minutes, then remove foil and sprinkle cheddar cheese evenly on top.
  9. Return to the oven uncovered and bake for an additional 10–15 minutes until rice is tender and cheese is melted.
  10. Let rest for 5 minutes before serving.

  • Brown rice can be used but will require extra liquid and cooking time.
