Ingredients
- 1 cup unsalted butter, softened
- 2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/4 tsp salt
- 1 1/2 cups granulated sugar
- 3 large eggs
- 1/2 cup fresh lemon juice
- 2 tbsp lemon zest
- 1 cup fresh or frozen cranberries
- 2 tbsp cornstarch
- Powdered sugar for dusting
Instructions
- Preheat oven to 175°C (350°F) and line a baking pan with parchment paper.
- In a bowl, mix butter, flour, powdered sugar, and salt until crumbly.
- Press the mixture evenly into the prepared pan to form the crust.
- Bake the crust for 15–18 minutes until lightly golden.
- Meanwhile, blend cranberries until smooth.
- In another bowl, whisk granulated sugar, eggs, lemon juice, lemon zest, cornstarch, and cranberry puree.
- Pour the filling over the hot crust.
- Return to the oven and bake for 20–25 minutes until set.
- Allow to cool completely, then chill for at least 1 hour.
- Dust with powdered sugar, slice into bars, and serve.
