Ingredients

  • 1 cup unsalted butter, softened
  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 tsp salt
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1/2 cup fresh lemon juice
  • 2 tbsp lemon zest
  • 1 cup fresh or frozen cranberries
  • 2 tbsp cornstarch
  • Powdered sugar for dusting


Instructions

  1. Preheat oven to 175°C (350°F) and line a baking pan with parchment paper.
  2. In a bowl, mix butter, flour, powdered sugar, and salt until crumbly.
  3. Press the mixture evenly into the prepared pan to form the crust.
  4. Bake the crust for 15–18 minutes until lightly golden.
  5. Meanwhile, blend cranberries until smooth.
  6. In another bowl, whisk granulated sugar, eggs, lemon juice, lemon zest, cornstarch, and cranberry puree.
  7. Pour the filling over the hot crust.
  8. Return to the oven and bake for 20–25 minutes until set.
  9. Allow to cool completely, then chill for at least 1 hour.
  10. Dust with powdered sugar, slice into bars, and serve.
