Description

Black Pepper Chicken is a savory stir-fry made with tender chicken pieces, crisp vegetables, and a bold black pepper sauce that delivers a rich, slightly spicy flavor.


Ingredients

  • 500 g boneless chicken breast or thighs, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 small onion, sliced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1/2 cup chicken broth
  • 1 teaspoon sugar
  • Salt to taste


Instructions

  1. In a bowl, mix chicken pieces with soy sauce, half of the black pepper, and cornstarch. Let it marinate for 10–15 minutes.
  2. Heat 1 tablespoon oil in a wok or skillet over medium-high heat.
  3. Add the marinated chicken and stir-fry for 4–5 minutes until cooked through. Remove and set aside.
  4. Add the remaining oil to the pan and sauté garlic and ginger for about 30 seconds until fragrant.
  5. Add sliced onions and bell peppers and stir-fry for 2–3 minutes until slightly tender but still crisp.
  6. Return the cooked chicken to the pan.
  7. Add oyster sauce, chicken broth, sugar, and the remaining black pepper.
  8. Stir everything together and cook for another 2–3 minutes until the sauce thickens and coats the chicken.
  9. Taste and adjust salt if needed, then serve hot.

Notes

  • Freshly ground black pepper gives the best flavor for this dish.
  • You can add mushrooms or broccoli for extra vegetables.
  • Serve with steamed rice or fried rice.
  • Chicken thighs provide a juicier texture compared to chicken breast.
