Ingredients
- 4 salmon fillets (about 6 oz each)
- 2 tablespoons olive oil
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1/2 cup chicken broth (or white wine)
- 1 cup heavy cream
- 1 tablespoon Dijon mustard
- 1 teaspoon whole-grain mustard (optional)
- 1 teaspoon lemon juice
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- In a small bowl, mix together smoked paprika, garlic powder, onion powder, dried thyme, cayenne, salt, and black pepper.
- Pat salmon fillets dry with paper towels and rub the spice mixture evenly over both sides.
- Heat olive oil in a large skillet over medium-high heat. Sear the salmon for 3–4 minutes per side until blackened and cooked through. Remove from the pan and set aside.
- In the same skillet, reduce heat to medium and melt butter. Add minced garlic and cook for 30 seconds until fragrant.
- Pour in chicken broth (or wine) and scrape up any browned bits from the pan. Simmer for 1–2 minutes.
- Stir in heavy cream, Dijon mustard, whole-grain mustard, lemon juice, and Parmesan cheese. Whisk until smooth and slightly thickened, about 3–5 minutes.
- Return salmon to the pan and spoon sauce over the fillets. Simmer gently for 1–2 minutes to warm through.
- Garnish with chopped parsley and serve immediately.

- For extra zest, add a pinch of crushed red pepper flakes or more lemon juice to the sauce.
