Description
Boston Cream Donuts are soft, fluffy yeast donuts filled with creamy vanilla custard and topped with a rich chocolate glaze, inspired by the classic Boston Cream Pie.
Ingredients
- 2 1/4 teaspoons active dry yeast
- 3/4 cup warm milk (110°F/45°C)
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 2 large eggs
- 3 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- Vegetable oil, for frying
- 2 cups whole milk (for custard)
- 1/2 cup granulated sugar (for custard)
- 1/4 cup cornstarch
- 4 large egg yolks
- 2 tablespoons unsalted butter (for custard)
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips (for glaze)
- 1/2 cup heavy cream (for glaze)
Instructions
- In a small bowl, dissolve yeast in warm milk with 1 tablespoon sugar. Let sit until foamy, about 5–10 minutes.
- In a large bowl, mix butter, eggs, remaining sugar, flour, and salt. Add yeast mixture and knead until smooth, about 5–7 minutes.
- Place dough in a greased bowl, cover, and let rise for 1–2 hours until doubled in size.
- Roll dough to about 1/2-inch thickness and cut out rounds using a donut cutter or glass.
- Place donuts on a baking sheet, cover, and let rise another 30–45 minutes.
- Heat oil in a deep fryer or pot to 350°F (175°C). Fry donuts in batches until golden brown, about 1–2 minutes per side. Drain on paper towels.
- For custard: In a saucepan, heat milk until steaming. In a bowl, whisk egg yolks, sugar, and cornstarch until smooth. Slowly pour hot milk into yolk mixture, whisking constantly.
- Return mixture to saucepan and cook over medium heat, whisking until thickened. Remove from heat, stir in butter and vanilla. Chill until set.
- For glaze: Heat heavy cream until simmering, then pour over chocolate chips. Stir until smooth.
- To assemble: Cut a small slit in each donut and pipe in custard filling. Dip tops in chocolate glaze and let set before serving.
Notes
- Make sure oil is at the correct temperature to avoid greasy or undercooked donuts.
- Custard can be made a day ahead for convenience.
- For extra shine, add 1 teaspoon of corn syrup to the chocolate glaze.
