Description

Delicate crepes filled with creamy vanilla custard and topped with rich chocolate glaze, inspired by the classic Boston Cream Pie in an elegant dessert form.


Ingredients

  • Crepes:
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/4 cups milk
  • 2 tablespoons melted butter
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Custard Filling:
  • 1 cup whole milk
  • 3 egg yolks
  • 1/4 cup sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter
  • Chocolate Glaze:
  • 1/2 cup heavy cream
  • 4 oz semi-sweet chocolate, chopped


Instructions

  1. In a bowl, whisk together flour, eggs, milk, melted butter, sugar, vanilla, and salt until smooth.
  2. Heat a nonstick skillet over medium heat and lightly grease.
  3. Pour about 1/4 cup batter into the pan, swirling to coat evenly. Cook 1–2 minutes per side. Repeat and set aside.
  4. To make custard, heat milk in a saucepan until warm.
  5. In a bowl, whisk egg yolks, sugar, and cornstarch until smooth.
  6. Slowly whisk warm milk into egg mixture, then return to saucepan.
  7. Cook over medium heat, stirring constantly, until thickened.
  8. Remove from heat and stir in vanilla and butter. Cool slightly.
  9. For glaze, heat cream until just simmering, then pour over chocolate. Let sit 2 minutes and stir until smooth.
  10. Fill crepes with custard, fold or roll, and drizzle with chocolate glaze before serving.

Notes

  • Crepes can be made ahead and refrigerated.
  • Allow custard to cool before filling crepes.
  • Best served fresh but can be chilled for a firmer texture.
