Description
Savory, protein-packed brownies made with tender broccoli, tangy feta cheese, and a touch of herbs — a unique twist on the classic brownie that’s perfect as a snack, side dish, or light lunch!
Ingredients
- 1 1/2 cups (150g) cooked broccoli florets, finely chopped
- 3 large eggs
- 1/2 cup (120ml) olive oil
- 1/2 cup (60g) all-purpose flour (or whole wheat flour)
- 1/2 cup (50g) rolled oats, ground into flour
- 1/2 cup (80g) crumbled feta cheese
- 1/4 cup (25g) grated Parmesan cheese
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- 1/4 cup (60ml) milk or Greek yogurt
- 2 tbsp chopped fresh parsley (optional)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch (20x20cm) baking pan with parchment paper.
- In a large bowl, whisk together eggs, olive oil, and milk (or yogurt) until smooth.
- In another bowl, mix flour, oat flour, baking powder, salt, pepper, garlic powder, and oregano.
- Add the dry ingredients to the wet mixture and stir until combined.
- Fold in chopped broccoli, feta, Parmesan, and parsley until evenly distributed.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25–30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Let cool slightly before slicing into squares. Serve warm or at room temperature.
Notes
