Description

Savory, protein-packed brownies made with tender broccoli, tangy feta cheese, and a touch of herbs — a unique twist on the classic brownie that’s perfect as a snack, side dish, or light lunch!


Ingredients

  • 1 1/2 cups (150g) cooked broccoli florets, finely chopped
  • 3 large eggs
  • 1/2 cup (120ml) olive oil
  • 1/2 cup (60g) all-purpose flour (or whole wheat flour)
  • 1/2 cup (50g) rolled oats, ground into flour
  • 1/2 cup (80g) crumbled feta cheese
  • 1/4 cup (25g) grated Parmesan cheese
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/4 cup (60ml) milk or Greek yogurt
  • 2 tbsp chopped fresh parsley (optional)


Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch (20x20cm) baking pan with parchment paper.
  2. In a large bowl, whisk together eggs, olive oil, and milk (or yogurt) until smooth.
  3. In another bowl, mix flour, oat flour, baking powder, salt, pepper, garlic powder, and oregano.
  4. Add the dry ingredients to the wet mixture and stir until combined.
  5. Fold in chopped broccoli, feta, Parmesan, and parsley until evenly distributed.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 25–30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Let cool slightly before slicing into squares. Serve warm or at room temperature.
