Ingredients

  • 1 1/2 pounds ground beef (or a mix of beef and pork)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 3/4 cup breadcrumbs
  • 1/2 cup milk
  • 1 large egg
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 cup ketchup (for glaze)
  • 1/4 cup brown sugar (for glaze)
  • 1 tablespoon apple cider vinegar (for glaze)
  • 2 pounds potatoes, peeled and chopped
  • 4 cloves garlic, peeled
  • 4 tablespoons butter
  • 1/2 cup milk or cream
  • Salt and pepper, to taste


Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet or loaf pan with parchment paper.
  2. In a large bowl, combine ground beef, onion, garlic, breadcrumbs, milk, egg, ketchup, Worcestershire sauce, salt, pepper, and thyme. Mix gently until well combined.
  3. Shape the mixture into a loaf and place it on the prepared pan.
  4. In a small bowl, whisk together ketchup, brown sugar, and apple cider vinegar. Brush half of the glaze over the top of the meatloaf.
  5. Bake for 45 minutes, then brush with remaining glaze and bake an additional 15 minutes, until internal temperature reaches 160°F (71°C).
  6. While the meatloaf bakes, prepare the mashed potatoes. Boil potatoes and garlic in salted water for 15–20 minutes, or until tender.
  7. Drain and mash with butter, milk, salt, and pepper until smooth and creamy.
  8. Let the meatloaf rest for 5 minutes before slicing. Serve with garlic mashed potatoes and extra glaze if desired.

  • Use 80/20 ground beef for a juicy, flavorful loaf.
  • Add a pinch of cayenne to the glaze for a subtle heat.
  • Mashed potatoes can be made ahead and reheated with a splash of milk.
