Description
A tender, juicy meatloaf coated with a sweet and savory brown sugar glaze, served alongside creamy garlic mashed potatoes. This comforting classic dinner is a perfect blend of rich flavor, hearty texture, and homestyle goodness.
Ingredients
- 1 1/2 pounds ground beef (or a mix of beef and pork)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 3/4 cup breadcrumbs
- 1/2 cup milk
- 1 large egg
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 cup ketchup (for glaze)
- 1/4 cup brown sugar (for glaze)
- 1 tablespoon apple cider vinegar (for glaze)
- 2 pounds potatoes, peeled and chopped
- 4 cloves garlic, peeled
- 4 tablespoons butter
- 1/2 cup milk or cream
- Salt and pepper, to taste
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet or loaf pan with parchment paper.
- In a large bowl, combine ground beef, onion, garlic, breadcrumbs, milk, egg, ketchup, Worcestershire sauce, salt, pepper, and thyme. Mix gently until well combined.
- Shape the mixture into a loaf and place it on the prepared pan.
- In a small bowl, whisk together ketchup, brown sugar, and apple cider vinegar. Brush half of the glaze over the top of the meatloaf.
- Bake for 45 minutes, then brush with remaining glaze and bake an additional 15 minutes, until internal temperature reaches 160°F (71°C).
- While the meatloaf bakes, prepare the mashed potatoes. Boil potatoes and garlic in salted water for 15–20 minutes, or until tender.
- Drain and mash with butter, milk, salt, and pepper until smooth and creamy.
- Let the meatloaf rest for 5 minutes before slicing. Serve with garlic mashed potatoes and extra glaze if desired.

- Use 80/20 ground beef for a juicy, flavorful loaf.
- Add a pinch of cayenne to the glaze for a subtle heat.
- Mashed potatoes can be made ahead and reheated with a splash of milk.
- Leftovers make great sandwiches the next day.
