Ingredients
- 4 boneless, skinless chicken breasts
- 2 tbsp Cajun seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 tbsp olive oil
- 3 tbsp unsalted butter
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1 cup shredded sharp cheddar cheese
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Pat chicken dry and season both sides with Cajun seasoning, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Cook chicken 4–5 minutes per side until golden and cooked through (165°F). Remove from skillet and set aside.
- In the same skillet, melt butter. Add garlic and sauté for 1 minute until fragrant.
- Pour in chicken broth and simmer for 2 minutes, scraping up browned bits from the pan.
- Stir in heavy cream and simmer until slightly thickened.
- Return chicken to the skillet and spoon sauce over it. Sprinkle cheddar cheese on top and cover until melted.
- Garnish with parsley and serve warm with rice, mashed potatoes, or vegetables.
