Ingredients

  • 1 lb sirloin or ribeye steak, cut into bite-sized pieces
  • 2 tsp Cajun seasoning
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 cups rotini pasta
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp black pepper
  • 1/4 tsp paprika (optional)
  • Salt, to taste
  • 2 tbsp chopped parsley (for garnish)


Instructions

  1. Cook rotini pasta according to package directions until al dente. Drain and set aside.
  2. Season steak bites with Cajun seasoning and a pinch of salt.
  3. Heat olive oil in a large skillet over medium-high heat. Add steak bites and sear for 2–3 minutes per side, until browned and cooked to desired doneness. Remove from skillet and set aside.
  4. In the same skillet, add butter and minced garlic. Cook for 1 minute until fragrant.
  5. Whisk in flour and cook for 1 minute to form a roux.
  6. Gradually whisk in milk and stir until sauce thickens, about 3–5 minutes.
  7. Lower the heat and stir in cheddar and Parmesan cheese until smooth and creamy. Season with black pepper and paprika.
  8. Add cooked rotini to the sauce and toss to coat evenly.
  9. Return steak tips to the skillet and mix gently to combine everything.
  10. Serve warm, garnished with chopped parsley and extra Parmesan if desired.
