Description

Soft and chewy cookies filled with a creamy cheesecake center and drizzled with rich caramel, combining the flavors of cheesecake and cookies in one indulgent treat.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 115 g cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 cup caramel sauce
  • 1/2 cup white chocolate chips (optional)


Instructions

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a bowl, mix flour, baking soda, and salt. Set aside.
  3. In another bowl, beat butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add egg and vanilla extract and mix until combined.
  5. Gradually add the dry ingredients and mix until a soft dough forms.
  6. In a small bowl, mix cream cheese and powdered sugar until smooth.
  7. Scoop cookie dough, flatten slightly, and add a small spoon of cream cheese mixture in the center.
  8. Wrap dough around the filling and place on baking sheet.
  9. Bake for 12–14 minutes until edges are lightly golden.
  10. Cool completely, then drizzle with caramel sauce before serving.

Notes

  • Chill the dough for 30 minutes if it feels too soft.
  • Do not overfill cookies to prevent leaking.
  • Store cookies in the refrigerator due to the cream cheese filling.
