Ingredients
- 12 oz pasta (cavatappi or rotini works best)
- 1 lb boneless skinless chicken breasts, diced
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 cup spinach (optional for green “cauldron greens”)
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- Green food coloring (optional for spooky effect)
- Fresh parsley for garnish
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat.
- Add diced chicken and cook until browned and cooked through. Remove and set aside.
- In the same skillet, sauté the onion until softened.
- Add garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and bring to a simmer.
- Stir in heavy cream, mozzarella, cheddar, and Parmesan, mixing until cheese is melted and sauce is smooth.
- Add smoked paprika, salt, and pepper. Stir in green food coloring if using.
- Return the chicken to the skillet and add spinach if desired, allowing it to wilt.
- Toss in the cooked pasta until fully coated in the cheesy sauce.
- Garnish with parsley and serve warm.
