Ingredients

  • 12 oz pasta (cavatappi or rotini works best)
  • 1 lb boneless skinless chicken breasts, diced
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup spinach (optional for green “cauldron greens”)
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Green food coloring (optional for spooky effect)
  • Fresh parsley for garnish


Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add diced chicken and cook until browned and cooked through. Remove and set aside.
  4. In the same skillet, sauté the onion until softened.
  5. Add garlic and cook for 1 minute until fragrant.
  6. Pour in chicken broth and bring to a simmer.
  7. Stir in heavy cream, mozzarella, cheddar, and Parmesan, mixing until cheese is melted and sauce is smooth.
  8. Add smoked paprika, salt, and pepper. Stir in green food coloring if using.
  9. Return the chicken to the skillet and add spinach if desired, allowing it to wilt.
  10. Toss in the cooked pasta until fully coated in the cheesy sauce.
  11. Garnish with parsley and serve warm.
