Juicy oven-baked chicken breasts stuffed with a creamy mixture of broccoli and melted cheese, seasoned to perfection for a comforting and flavorful low-carb dinner.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 teaspoon salt, divided
- 1/2 teaspoon black pepper, divided
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 tablespoon olive oil
- 1 1/2 cups (150 g) finely chopped broccoli florets (lightly steamed)
- 1 cup (100 g) shredded cheddar cheese
- 2 oz (60 g) cream cheese, softened
- 2 cloves garlic, minced
- 2 tablespoons grated Parmesan cheese
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Using a sharp knife, cut a pocket into the side of each chicken breast without cutting all the way through.
- Season the outside of the chicken with salt, pepper, garlic powder, and paprika.
- In a bowl, combine chopped broccoli, cheddar cheese, cream cheese, minced garlic, and Parmesan cheese. Mix until well combined.
- Stuff each chicken breast with the broccoli cheese mixture and secure with toothpicks if needed.
- Heat olive oil in a skillet over medium heat. Sear the stuffed chicken breasts for 2–3 minutes per side until lightly golden.
- Transfer chicken to the prepared baking dish and bake for 20–25 minutes, or until the internal temperature reaches 165°F (74°C).
- Remove toothpicks before serving and let rest for 5 minutes.
Notes
- Make sure the broccoli is finely chopped and not too wet to prevent excess moisture.
- You can substitute mozzarella or Monterey Jack for cheddar.
- Add a pinch of red pepper flakes for extra heat.
- This recipe pairs well with rice, mashed potatoes, or a fresh salad.
