Description

Juicy oven-baked chicken breasts stuffed with a creamy mixture of broccoli and melted cheese, seasoned to perfection for a comforting and flavorful low-carb dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 tablespoon olive oil
  • 1 1/2 cups (150 g) finely chopped broccoli florets (lightly steamed)
  • 1 cup (100 g) shredded cheddar cheese
  • 2 oz (60 g) cream cheese, softened
  • 2 cloves garlic, minced
  • 2 tablespoons grated Parmesan cheese


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Using a sharp knife, cut a pocket into the side of each chicken breast without cutting all the way through.
  3. Season the outside of the chicken with salt, pepper, garlic powder, and paprika.
  4. In a bowl, combine chopped broccoli, cheddar cheese, cream cheese, minced garlic, and Parmesan cheese. Mix until well combined.
  5. Stuff each chicken breast with the broccoli cheese mixture and secure with toothpicks if needed.
  6. Heat olive oil in a skillet over medium heat. Sear the stuffed chicken breasts for 2–3 minutes per side until lightly golden.
  7. Transfer chicken to the prepared baking dish and bake for 20–25 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Remove toothpicks before serving and let rest for 5 minutes.

Notes

  • Make sure the broccoli is finely chopped and not too wet to prevent excess moisture.
  • You can substitute mozzarella or Monterey Jack for cheddar.
  • Add a pinch of red pepper flakes for extra heat.
  • This recipe pairs well with rice, mashed potatoes, or a fresh salad.
