Cheesy Cauliflower Casserole is a creamy, comforting, low-carb side dish made with tender cauliflower florets smothered in a rich, cheesy sauce and baked to golden perfection. It’s a delicious alternative to traditional potato casseroles.
Ingredients
- 1 large head of cauliflower, cut into florets
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 cup heavy cream
- 4 oz cream cheese, softened
- 1 1/2 cups shredded cheddar cheese (divided)
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Salt and black pepper to taste
- 1/2 tsp paprika (optional)
- 2 tbsp chopped fresh parsley (for garnish)
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a 9×9-inch baking dish.
- Steam or boil cauliflower florets for 5–7 minutes, until just tender. Drain well and set aside.
- In a saucepan over medium heat, melt butter and sauté garlic for 30 seconds until fragrant.
- Stir in heavy cream and cream cheese, whisking until smooth and creamy.
- Add 1 cup cheddar, mozzarella, and Parmesan cheese. Stir until melted and combined. Season with salt, pepper, and paprika.
- Combine the cauliflower with the cheese sauce and mix until evenly coated.
- Transfer the mixture to the prepared baking dish and top with the remaining 1/2 cup cheddar cheese.
- Bake for 20–25 minutes, until bubbly and golden on top.
- Garnish with chopped parsley before serving.

- For extra crunch, sprinkle crushed pork rinds or breadcrumbs on top before baking.
