Ingredients

  • 8 slices thick-cut bread (Italian or sourdough)
  • 1/2 lb shrimp, peeled and deveined
  • 2 tablespoons butter (for cooking shrimp)
  • 3 cloves garlic, minced
  • 1 teaspoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons butter (for garlic spread)
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese


Instructions

  1. In a skillet, melt 2 tablespoons butter over medium heat. Add minced garlic and cook for 30 seconds until fragrant.
  2. Add shrimp, lemon juice, salt, and pepper. Cook 2–3 minutes per side until pink and cooked through. Remove from heat and set aside.
  3. In a small bowl, mix 4 tablespoons butter with parsley, garlic powder, oregano, and Parmesan to make the garlic butter spread.
  4. Spread the garlic butter mixture on one side of each bread slice.
  5. Assemble the sandwiches: place one slice of bread (butter side down) on a skillet or griddle, add mozzarella, shrimp, cheddar, and top with another slice of bread (butter side up).
  6. Cook over medium-low heat for 3–4 minutes per side, pressing gently, until the bread is golden and the cheese is melted.
  7. Slice in half and serve hot with marinara or garlic dipping sauce.
