Description

A comforting and satisfying Cheesy Ground Beef and Rice Casserole made with tender rice, seasoned ground beef, vegetables, and a rich creamy cheese sauce — perfect for busy weeknights or cozy family dinners.


Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice (uncooked)
  • 2 cups beef broth
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 cups shredded cheddar cheese, divided
  • 2 tablespoons chopped fresh parsley (for garnish)


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium-high heat, add olive oil and ground beef. Cook until browned, breaking it apart as it cooks. Drain any excess fat.
  3. Add diced onion and minced garlic to the skillet and cook for 2–3 minutes until softened and fragrant.
  4. Stir in uncooked rice, beef broth, cream of mushroom soup, cream of chicken soup, frozen vegetables, salt, pepper, and paprika. Mix until well combined.
  5. Transfer the mixture to the prepared baking dish and spread evenly. Cover tightly with aluminum foil.
  6. Bake for 35–40 minutes, or until the rice is tender and most of the liquid is absorbed.
  7. Remove foil, stir in 1 1/2 cups of the shredded cheddar cheese, then sprinkle the remaining 1/2 cup on top.
  8. Return to the oven uncovered for 5–10 minutes, until cheese is melted and bubbly.
  9. Garnish with chopped parsley and serve warm.

Notes

  • For a little spice, add 1/2 teaspoon of chili powder or cayenne pepper.
  • Use brown rice, but increase baking time by 15–20 minutes and add extra broth if needed.
  • Substitute ground turkey or chicken for a lighter option.
  • Leftovers reheat well in the microwave or oven with a splash of broth to keep it moist.
