Cheesy Rotel Tacos are a creamy, zesty twist on traditional tacos — made with seasoned ground beef, melted cheese, and Rotel tomatoes for a flavorful Tex-Mex experience that’s perfect for Taco Tuesday or any weeknight meal.
Ingredients
- 1 lb ground beef
- 1/2 small onion, finely chopped
- 1 can (10 oz) Rotel diced tomatoes with green chilies, undrained
- 1 packet taco seasoning mix
- 1/4 cup water
- 4 oz cream cheese, cubed
- 1 cup shredded cheddar or Mexican blend cheese
- 8 small taco shells or tortillas
- Toppings: shredded lettuce, diced tomatoes, sour cream, jalapeños, and fresh cilantro
Instructions
- In a large skillet over medium heat, cook ground beef and chopped onion until the meat is browned and the onion is tender. Drain any excess grease.
- Stir in the taco seasoning, Rotel, and water. Mix well and simmer for 5 minutes.
- Add the cream cheese and stir until fully melted and incorporated into the mixture.
- Stir in the shredded cheese until melted and creamy.
- Warm the taco shells or tortillas according to package instructions.
- Spoon the cheesy beef mixture into the taco shells and top with your favorite toppings like lettuce, tomatoes, and sour cream.
- Serve immediately and enjoy!
Notes
- For extra spice, use Hot Rotel or add a pinch of chili powder.
- Try ground turkey or chicken for a lighter version.
- The cheesy filling also works great for nachos or as a dip with tortilla chips.
