Cheesy Rotel Tacos are a creamy, zesty twist on traditional tacos — made with seasoned ground beef, melted cheese, and Rotel tomatoes for a flavorful Tex-Mex experience that’s perfect for Taco Tuesday or any weeknight meal.


Ingredients

  • 1 lb ground beef
  • 1/2 small onion, finely chopped
  • 1 can (10 oz) Rotel diced tomatoes with green chilies, undrained
  • 1 packet taco seasoning mix
  • 1/4 cup water
  • 4 oz cream cheese, cubed
  • 1 cup shredded cheddar or Mexican blend cheese
  • 8 small taco shells or tortillas
  • Toppings: shredded lettuce, diced tomatoes, sour cream, jalapeños, and fresh cilantro


Instructions

  1. In a large skillet over medium heat, cook ground beef and chopped onion until the meat is browned and the onion is tender. Drain any excess grease.
  2. Stir in the taco seasoning, Rotel, and water. Mix well and simmer for 5 minutes.
  3. Add the cream cheese and stir until fully melted and incorporated into the mixture.
  4. Stir in the shredded cheese until melted and creamy.
  5. Warm the taco shells or tortillas according to package instructions.
  6. Spoon the cheesy beef mixture into the taco shells and top with your favorite toppings like lettuce, tomatoes, and sour cream.
