Description
A classic comfort food casserole made with layers of seasoned ground beef, creamy soup, melted cheese, and crispy golden tater tots baked to perfection.
Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or 2 tbsp homemade seasoning)
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1/2 cup sour cream
- 2 cups shredded cheddar cheese
- 1 bag (32 oz) frozen tater tots
- Salt and pepper, to taste
- 2 tbsp chopped green onions (for garnish, optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a large skillet, cook ground beef over medium-high heat until browned. Drain excess fat.
- Add onion and garlic, cooking until softened, about 3 minutes.
- Stir in taco seasoning, cream of mushroom soup, and sour cream. Simmer for 2–3 minutes until combined.
- Spread beef mixture evenly into the prepared baking dish.
- Sprinkle 1 cup of cheddar cheese over the beef layer.
- Arrange tater tots in an even layer on top.
- Bake for 35–40 minutes until tater tots are golden and crispy.
- Remove from oven, sprinkle remaining cheddar cheese on top, and return to oven for 5 minutes until melted.
- Garnish with green onions and serve hot.
Notes
- You can substitute ground turkey or chicken for a lighter version.
- Add frozen mixed vegetables to the beef layer for extra nutrition.
- Great for meal prep and reheats well the next day.
