Description

Chicken One Pot Spaghetti is a simple, creamy, and flavorful pasta dish made with tender chicken, spaghetti, and a rich tomato-based sauce — all cooked together in one pot for an easy and delicious weeknight dinner.


Ingredients

  • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 2 tbsp tomato paste
  • 3 cups chicken broth
  • 1 cup milk or heavy cream
  • 8 oz uncooked spaghetti
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp chopped parsley (for garnish)


Instructions

  1. Heat olive oil in a large pot or deep skillet over medium heat. Add chicken and cook until browned on all sides, about 5–6 minutes. Remove and set aside.
  2. In the same pot, add onion and sauté until soft, about 3 minutes. Add garlic and cook for another 30 seconds.
  3. Stir in tomato paste, diced tomatoes, Italian seasoning, paprika, salt, and pepper. Mix well.
  4. Add the uncooked spaghetti, chicken broth, and milk. Stir to combine, making sure the spaghetti is submerged in the liquid.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 12–15 minutes, stirring occasionally to prevent sticking.
  6. Return the cooked chicken to the pot and stir until heated through and the sauce has thickened.
  7. Stir in Parmesan cheese until melted and creamy.
  8. Garnish with chopped parsley before serving.

Notes

  • Break the spaghetti in half for easier stirring and even cooking.
  • Use rotisserie chicken for a quicker version.
  • Add spinach, mushrooms, or bell peppers for extra flavor and nutrition.
