Description
Chicken One Pot Spaghetti is a simple, creamy, and flavorful pasta dish made with tender chicken, spaghetti, and a rich tomato-based sauce — all cooked together in one pot for an easy and delicious weeknight dinner.
Ingredients
- 2 tbsp olive oil
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes
- 2 tbsp tomato paste
- 3 cups chicken broth
- 1 cup milk or heavy cream
- 8 oz uncooked spaghetti
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt and black pepper to taste
- 1/2 cup grated Parmesan cheese
- 2 tbsp chopped parsley (for garnish)
Instructions
- Heat olive oil in a large pot or deep skillet over medium heat. Add chicken and cook until browned on all sides, about 5–6 minutes. Remove and set aside.
- In the same pot, add onion and sauté until soft, about 3 minutes. Add garlic and cook for another 30 seconds.
- Stir in tomato paste, diced tomatoes, Italian seasoning, paprika, salt, and pepper. Mix well.
- Add the uncooked spaghetti, chicken broth, and milk. Stir to combine, making sure the spaghetti is submerged in the liquid.
- Bring to a boil, then reduce heat to low. Cover and simmer for 12–15 minutes, stirring occasionally to prevent sticking.
- Return the cooked chicken to the pot and stir until heated through and the sauce has thickened.
- Stir in Parmesan cheese until melted and creamy.
- Garnish with chopped parsley before serving.
Notes
- Break the spaghetti in half for easier stirring and even cooking.
- Use rotisserie chicken for a quicker version.
- Add spinach, mushrooms, or bell peppers for extra flavor and nutrition.
- Adjust thickness by adding more broth or milk as needed.
