Description

Homemade chicken parmesan hot pockets filled with crispy chicken, marinara sauce, and gooey mozzarella cheese wrapped in golden pastry for a handheld comfort food classic.


Ingredients

  • 2 cups cooked chicken breast, shredded
  • 1 cup marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • 1 package refrigerated pizza dough (or puff pastry)
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon olive oil (optional, for brushing)


Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix shredded chicken with marinara sauce, mozzarella, Parmesan, Italian seasoning, salt, and pepper.
  3. Roll out pizza dough and cut into 6–8 equal rectangles.
  4. Spoon chicken mixture onto one half of each rectangle, leaving edges clear.
  5. Fold dough over filling and press edges with a fork to seal.
  6. Brush tops with egg wash and lightly brush with olive oil if desired.
  7. Bake for 18–20 minutes, until golden brown.
  8. Let cool slightly before serving.

Notes

  • Can be made ahead and frozen before baking. Bake from frozen, adding 5–7 extra minutes.
  • Use rotisserie chicken for a quick shortcut.
  • Serve with extra marinara sauce for dipping.
