Description
Classic French Beef Stew with Mushrooms is a rich, slow-simmered dish featuring tender beef chunks, earthy mushrooms, and vegetables cooked in a deeply flavored savory sauce.
Ingredients
- 2 lb beef chuck, cut into 1 1/2-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons all-purpose flour
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 3 carrots, sliced
- 2 cups mushrooms, halved
- 2 tablespoons tomato paste
- 3 cups beef broth
- 1 teaspoon dried thyme
- 1 bay leaf
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Season beef with salt and pepper, then toss with flour.
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Brown beef in batches until well seared; remove and set aside.
- Add onion to the pot and cook until softened.
- Add garlic and cook for 30 seconds.
- Stir in tomato paste and cook for 1 minute.
- Return beef to the pot and add beef broth, thyme, and bay leaf.
- Bring to a simmer, cover, and cook on low heat for 1 1/2 hours.
- Add carrots and mushrooms and continue cooking for 30–40 minutes until beef is tender.
- Remove bay leaf, garnish with parsley, and serve hot.
Notes
- Serve with crusty bread or mashed potatoes.
- The stew tastes even better the next day.
- You may substitute pearl onions for chopped onion.
