Description

Light, fluffy, and protein-packed egg bites made with cottage cheese, perfect for a quick breakfast or healthy snack.


Ingredients

  • 6 large eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped bell peppers
  • 2 tablespoons chopped green onions
  • Cooking spray or butter for greasing


Instructions

  1. Preheat oven to 350°F (175°C) and grease a muffin tin.
  2. In a blender, blend eggs, cottage cheese, milk, salt, and pepper until smooth.
  3. Stir in shredded cheese, bell peppers, and green onions.
  4. Pour mixture evenly into muffin cups, filling about 3/4 full.
  5. Bake for 18–22 minutes, until set and lightly golden.
  6. Remove from oven and let cool slightly before serving.
