Description
Light, fluffy, and protein-packed egg bites made with cottage cheese, perfect for a quick breakfast or healthy snack.
Ingredients
- 6 large eggs
- 1 cup cottage cheese
- 1/2 cup shredded cheddar cheese
- 1/4 cup milk
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped bell peppers
- 2 tablespoons chopped green onions
- Cooking spray or butter for greasing
Instructions
- Preheat oven to 350°F (175°C) and grease a muffin tin.
- In a blender, blend eggs, cottage cheese, milk, salt, and pepper until smooth.
- Stir in shredded cheese, bell peppers, and green onions.
- Pour mixture evenly into muffin cups, filling about 3/4 full.
- Bake for 18–22 minutes, until set and lightly golden.
- Remove from oven and let cool slightly before serving.
Notes
- Store in the refrigerator for up to 4 days.
- Reheat in the microwave for 20–30 seconds.
- Add spinach or mushrooms for variation.
