Ingredients
- 1 lb cheese tortellini (fresh or refrigerated)
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup vegetable or chicken broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 cups fresh spinach (optional)
- Fresh basil for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add onions and sauté until softened, about 4 minutes.
- Stir in garlic and cook 1 minute until fragrant.
- Add crushed tomatoes, broth, Italian seasoning, basil, salt, black pepper, and red pepper flakes. Simmer for 5–7 minutes.
- Pour in heavy cream and stir to combine.
- Add the tortellini directly into the sauce and simmer for 7–10 minutes, or until tender.
- Stir in Parmesan cheese until melted and creamy.
- If using spinach, stir it in until wilted.
- Remove from heat and garnish with fresh basil before serving.
