Ingredients

  • 1 lb cheese tortellini (fresh or refrigerated)
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup vegetable or chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 cups fresh spinach (optional)
  • Fresh basil for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onions and sauté until softened, about 4 minutes.
  2. Stir in garlic and cook 1 minute until fragrant.
  3. Add crushed tomatoes, broth, Italian seasoning, basil, salt, black pepper, and red pepper flakes. Simmer for 5–7 minutes.
  4. Pour in heavy cream and stir to combine.
  5. Add the tortellini directly into the sauce and simmer for 7–10 minutes, or until tender.
  6. Stir in Parmesan cheese until melted and creamy.
  7. If using spinach, stir it in until wilted.
  8. Remove from heat and garnish with fresh basil before serving.
