Description

A moist and flavorful cranberry orange bread bursting with tart cranberries and fresh orange zest. Perfect for breakfast, brunch, or as a festive holiday treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup orange juice (freshly squeezed preferred)
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tbsp orange zest
  • 1 1/2 cups fresh or frozen cranberries (halved)
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1 tsp vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, combine orange juice, melted butter, eggs, orange zest, and vanilla extract. Whisk until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
  5. Fold in cranberries and nuts (if using).
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • For extra orange flavor, drizzle with a simple orange glaze made from powdered sugar and orange juice.
  • Can be frozen for up to 3 months; wrap tightly in plastic wrap and foil.
  • Substitute dried cranberries if fresh are unavailable (reduce sugar slightly).
