Ingredients
- 1 1/2 cups Arborio rice
- 4 cups chicken or vegetable broth
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1/2 cup dry white wine (optional)
- 1/2 cup grated Parmesan cheese
- 1/4 cup heavy cream (optional, for extra creaminess)
- Salt and freshly ground black pepper, to taste
- 1 tablespoon chopped parsley, for garnish
Instructions
- In a medium saucepan, bring the broth to a gentle simmer and keep warm over low heat.
- In a large skillet or sauté pan, heat olive oil and butter over medium heat. Add onion and cook for 3–4 minutes until translucent.
- Add garlic and cook for 30 seconds until fragrant.
- Stir in Arborio rice and toast for 1–2 minutes, coating the grains in oil and butter.
- Pour in white wine (if using) and stir until fully absorbed.
- Add 1/2 cup of warm broth at a time, stirring constantly until absorbed before adding more. Continue this process for about 18–20 minutes, or until the rice is creamy and al dente.
- Stir in Parmesan cheese and heavy cream (if using). Season with salt and pepper to taste.
- Remove from heat and let rest for 2 minutes before serving. Garnish with chopped parsley and extra Parmesan.
Notes
- For vegetarian risotto, use vegetable broth instead of chicken broth.
- Constant stirring helps release starch from the rice, creating the signature creamy texture.
- Add sautéed mushrooms, peas, or shrimp for a heartier version.
