Ingredients
- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried Italian herbs
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons chopped fresh parsley
- 1 cup uncooked long-grain rice
- 2 cups water
Instructions
- Season the chicken breasts with salt, pepper, and Italian herbs.
- Heat olive oil in a large skillet over medium heat.
- Sear chicken on both sides for 4–5 minutes until golden, then remove and set aside.
- In the same skillet, add garlic and sauté for 30 seconds until fragrant.
- Pour in chicken broth and scrape up browned bits.
- Stir in heavy cream, lemon juice, and lemon zest; bring to a gentle simmer.
- Return chicken to the skillet and cook for 8–10 minutes until fully cooked and sauce thickens.
- Meanwhile, cook rice with water according to package instructions.
- Garnish chicken with parsley and serve over rice.
