Ingredients

  • 12 oz spaghetti
  • 2 boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons butter
  • 2 tablespoons chopped parsley (optional for garnish)


Instructions

  1. Preheat the oven to 400°F (200°C). Toss broccoli florets with 1 tablespoon olive oil, a pinch of salt, and pepper, then spread on a baking sheet.
  2. Roast the broccoli for 15–20 minutes until tender and slightly crispy.
  3. Cook spaghetti according to package instructions until al dente. Reserve 1/2 cup pasta water, then drain.
  4. Heat remaining olive oil in a large skillet over medium heat. Add chicken pieces, season with salt and pepper, and cook for 6–7 minutes until golden and cooked through. Remove and set aside.
  5. In the same skillet, melt butter and sauté minced garlic for about 1 minute until fragrant.
  6. Add chicken broth and heavy cream, stirring well. Bring to a gentle simmer.
  7. Stir in Parmesan cheese, Italian seasoning, and red pepper flakes. Cook until the sauce thickens slightly.
  8. Return the cooked chicken to the skillet and add the drained spaghetti. Toss everything together, adding a splash of reserved pasta water if needed to loosen the sauce.
  9. Serve the creamy chicken spaghetti topped with roasted broccoli and garnish with chopped parsley if desired.

  • Use freshly grated Parmesan for the smoothest and richest sauce.
  • You can substitute broccoli with roasted asparagus or spinach.
