Ingredients
- 12 oz spaghetti
- 2 boneless skinless chicken breasts, cut into bite-sized pieces
- 2 cups broccoli florets
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 3/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons butter
- 2 tablespoons chopped parsley (optional for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Toss broccoli florets with 1 tablespoon olive oil, a pinch of salt, and pepper, then spread on a baking sheet.
- Roast the broccoli for 15–20 minutes until tender and slightly crispy.
- Cook spaghetti according to package instructions until al dente. Reserve 1/2 cup pasta water, then drain.
- Heat remaining olive oil in a large skillet over medium heat. Add chicken pieces, season with salt and pepper, and cook for 6–7 minutes until golden and cooked through. Remove and set aside.
- In the same skillet, melt butter and sauté minced garlic for about 1 minute until fragrant.
- Add chicken broth and heavy cream, stirring well. Bring to a gentle simmer.
- Stir in Parmesan cheese, Italian seasoning, and red pepper flakes. Cook until the sauce thickens slightly.
- Return the cooked chicken to the skillet and add the drained spaghetti. Toss everything together, adding a splash of reserved pasta water if needed to loosen the sauce.
- Serve the creamy chicken spaghetti topped with roasted broccoli and garnish with chopped parsley if desired.
Notes
- Use freshly grated Parmesan for the smoothest and richest sauce.
- You can substitute broccoli with roasted asparagus or spinach.
- If the sauce becomes too thick, add a little reserved pasta water to adjust the consistency.
