Description

Creamy Queso Chicken Fajita Rice is a hearty one-pan meal made with tender chicken, bell peppers, onions, seasoned rice, and creamy queso cheese sauce. It’s a comforting, flavorful dish inspired by Tex-Mex fajitas and perfect for an easy family dinner.


Ingredients

  • 2 tablespoons olive oil
  • 450 g boneless skinless chicken breast (cubed)
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 small onion (sliced)
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 cup long-grain rice (uncooked)
  • 2 cups chicken broth
  • 1 cup queso cheese sauce
  • 1/2 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • Fresh parsley or cilantro for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken with chili powder, paprika, cumin, garlic powder, salt, and pepper.
  3. Add chicken to the skillet and cook until lightly browned, then remove and set aside.
  4. In the same skillet, sauté onion and bell peppers until softened.
  5. Add rice and stir for 1–2 minutes to lightly toast.
  6. Pour in chicken broth, stir well, cover, and simmer for 15 minutes until rice is cooked.
  7. Return chicken to the skillet and mix well.
  8. Stir in queso sauce, heavy cream, and shredded cheddar cheese.
  9. Simmer uncovered for 5 minutes until creamy and heated through.
  10. Garnish with parsley or cilantro and serve warm.

Notes

  • You can use brown rice, but cooking time will increase.
  • Add jalapeños for extra heat.
  • Store leftovers in an airtight container for up to 3 days.
