Creamy Queso Chicken Fajita Rice is a hearty one-pan meal made with tender chicken, bell peppers, onions, seasoned rice, and creamy queso cheese sauce. It’s a comforting, flavorful dish inspired by Tex-Mex fajitas and perfect for an easy family dinner.
Ingredients
- 2 tablespoons olive oil
- 450 g boneless skinless chicken breast (cubed)
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 1 small onion (sliced)
- 1 red bell pepper (sliced)
- 1 green bell pepper (sliced)
- 1 cup long-grain rice (uncooked)
- 2 cups chicken broth
- 1 cup queso cheese sauce
- 1/2 cup heavy cream
- 1/2 cup shredded cheddar cheese
- Fresh parsley or cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken with chili powder, paprika, cumin, garlic powder, salt, and pepper.
- Add chicken to the skillet and cook until lightly browned, then remove and set aside.
- In the same skillet, sauté onion and bell peppers until softened.
- Add rice and stir for 1–2 minutes to lightly toast.
- Pour in chicken broth, stir well, cover, and simmer for 15 minutes until rice is cooked.
- Return chicken to the skillet and mix well.
- Stir in queso sauce, heavy cream, and shredded cheddar cheese.
- Simmer uncovered for 5 minutes until creamy and heated through.
- Garnish with parsley or cilantro and serve warm.
Notes
- You can use brown rice, but cooking time will increase.
- Add jalapeños for extra heat.
- Store leftovers in an airtight container for up to 3 days.
