Ingredients
- 2 large chicken breasts, cut into bite-sized pieces
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (panko preferred)
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon Italian seasoning
- Vegetable oil for frying
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 tablespoon butter
- 3 cloves garlic, minced
- 1/2 cup heavy cream
- 3/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Cook rice in chicken broth according to package instructions. Set aside and keep warm.
- Season chicken pieces with salt, pepper, paprika, garlic powder, and Italian seasoning.
- Coat each chicken piece in flour, dip into beaten eggs, then coat with breadcrumbs.
- Heat vegetable oil in a deep skillet over medium heat. Fry chicken bites in batches for 4–5 minutes until golden brown and cooked through. Remove and drain on paper towels.
- In a separate pan, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Stir in heavy cream and bring to a gentle simmer.
- Add Parmesan cheese and stir until melted and smooth.
- Fold the cooked rice into the creamy garlic Parmesan sauce and mix well.
- Serve crispy chicken bites over the creamy rice and garnish with chopped parsley.

- For a healthier option, air-fry the chicken bites at 400°F (200°C) for 12–15 minutes, flipping halfway.
- Use freshly grated Parmesan for best flavor and melting quality.
