Ingredients

  • 2 large chicken breasts, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (panko preferred)
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • Vegetable oil for frying
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 3/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (for garnish)


Instructions

  1. Cook rice in chicken broth according to package instructions. Set aside and keep warm.
  2. Season chicken pieces with salt, pepper, paprika, garlic powder, and Italian seasoning.
  3. Coat each chicken piece in flour, dip into beaten eggs, then coat with breadcrumbs.
  4. Heat vegetable oil in a deep skillet over medium heat. Fry chicken bites in batches for 4–5 minutes until golden brown and cooked through. Remove and drain on paper towels.
  5. In a separate pan, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  6. Stir in heavy cream and bring to a gentle simmer.
  7. Add Parmesan cheese and stir until melted and smooth.
  8. Fold the cooked rice into the creamy garlic Parmesan sauce and mix well.
  9. Serve crispy chicken bites over the creamy rice and garnish with chopped parsley.
