- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 large eggs
- 2 tbsp milk
- 1/2 cup all-purpose flour
- 1/4 cup olive oil (or vegetable oil for frying)
- 2 tbsp chopped parsley (for garnish, optional)
- Lemon wedges (for serving, optional)
Instructions
- Pound chicken breasts to an even thickness for quicker, more even cooking.
- In a shallow dish, combine flour with a pinch of salt and pepper.
- In another dish, whisk eggs with milk.
- In a third dish, mix Parmesan, breadcrumbs, garlic powder, paprika, salt, and pepper.
- Dredge chicken in flour, then dip in egg mixture, and finally coat with the Parmesan-breadcrumb mixture.
- Heat olive oil in a large skillet over medium heat.
- Cook chicken breasts for 4–5 minutes per side until golden brown and fully cooked through (internal temperature 165°F/74°C).
- Transfer to a paper towel-lined plate to drain excess oil.
- Garnish with parsley and serve with lemon wedges if desired.
Notes
- Use freshly grated Parmesan for the best flavor and crispiness.
- You can bake the chicken at 400°F (200°C) for 20–25 minutes as a lighter option.
- Pairs well with mashed potatoes, pasta, or a fresh green salad.
