Description
Bite-sized roasted sweet potato cubes that are crispy on the outside and tender on the inside, seasoned to perfection for a delicious appetizer or side dish.
Ingredients
- 2 large sweet potatoes, peeled and cut into 1-inch cubes
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp cornstarch (for extra crispiness)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, toss sweet potato cubes with olive oil, garlic powder, paprika, salt, pepper, and cornstarch until evenly coated.
- Spread sweet potatoes in a single layer on the prepared baking sheet, making sure they are not overcrowded.
- Roast for 25–30 minutes, flipping halfway through, until golden brown and crispy.
- Remove from oven and sprinkle with fresh parsley before serving.
Notes
- Serve with a dipping sauce like spicy mayo, ranch, or honey mustard.
- Air fryer method: Cook at 400°F (200°C) for 15–18 minutes, shaking halfway.
