Description
Crispy golden egg rolls stuffed with a flavorful Cajun-inspired filling, served with a spicy creamy dipping sauce for a bold and irresistible appetizer.
Ingredients
- 12 egg roll wrappers
- 1 lb cooked chicken breast, shredded
- 1/2 cup bell peppers, diced (red, green, or mixed)
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 2 tbsp Cajun seasoning
- 1 tbsp hot sauce
- 2 tbsp olive oil
- 1/4 cup water (for sealing wrappers)
- Vegetable oil, for frying
- 1/2 cup mayonnaise
- 2 tbsp sour cream
- 2 tbsp hot sauce
- 1 tsp Cajun seasoning
- 1 tsp lemon juice
Instructions
- In a skillet, heat olive oil over medium heat. Sauté onion, bell peppers, and garlic until softened.
- Add shredded chicken, Cajun seasoning, and hot sauce. Stir to combine and cook for 2–3 minutes. Remove from heat and let cool slightly.
- Mix in shredded cheddar cheese until evenly distributed.
- Lay out egg roll wrappers. Place about 2–3 tablespoons of filling in the center of each wrapper.
- Fold the bottom corner over filling, then fold in the sides, and roll tightly. Seal the edge with water.
- Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
- Fry egg rolls in batches for 3–4 minutes until golden brown and crispy. Drain on paper towels.
- For the sauce: In a small bowl, mix mayonnaise, sour cream, hot sauce, Cajun seasoning, and lemon juice until smooth.
- Serve egg rolls hot with spicy cream sauce for dipping.
Notes
- You can use rotisserie chicken for convenience.
- For a lighter version, bake egg rolls at 425°F (220°C) for 15–18 minutes, flipping halfway through.
- Adjust spice level by adding more or less hot sauce to the filling or sauce.
