Description

Crispy golden egg rolls stuffed with a flavorful Cajun-inspired filling, served with a spicy creamy dipping sauce for a bold and irresistible appetizer.


Ingredients

  • 12 egg roll wrappers
  • 1 lb cooked chicken breast, shredded
  • 1/2 cup bell peppers, diced (red, green, or mixed)
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 2 tbsp Cajun seasoning
  • 1 tbsp hot sauce
  • 2 tbsp olive oil
  • 1/4 cup water (for sealing wrappers)
  • Vegetable oil, for frying
  • 1/2 cup mayonnaise
  • 2 tbsp sour cream
  • 2 tbsp hot sauce
  • 1 tsp Cajun seasoning
  • 1 tsp lemon juice


Instructions

  1. In a skillet, heat olive oil over medium heat. Sauté onion, bell peppers, and garlic until softened.
  2. Add shredded chicken, Cajun seasoning, and hot sauce. Stir to combine and cook for 2–3 minutes. Remove from heat and let cool slightly.
  3. Mix in shredded cheddar cheese until evenly distributed.
  4. Lay out egg roll wrappers. Place about 2–3 tablespoons of filling in the center of each wrapper.
  5. Fold the bottom corner over filling, then fold in the sides, and roll tightly. Seal the edge with water.
  6. Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
  7. Fry egg rolls in batches for 3–4 minutes until golden brown and crispy. Drain on paper towels.
  8. For the sauce: In a small bowl, mix mayonnaise, sour cream, hot sauce, Cajun seasoning, and lemon juice until smooth.
  9. Serve egg rolls hot with spicy cream sauce for dipping.

Notes

  • You can use rotisserie chicken for convenience.
  • For a lighter version, bake egg rolls at 425°F (220°C) for 15–18 minutes, flipping halfway through.
  • Adjust spice level by adding more or less hot sauce to the filling or sauce.
