Ingredients
- 16 oz cream cheese, softened
- 1/2 cup roasted red peppers, finely chopped
- 1/2 cup grated Parmesan cheese
- 1/4 cup green olives, finely chopped
- 1/4 cup black olives, finely chopped
- 1/4 cup sun-dried tomatoes, finely chopped
- 2 green onions, finely sliced
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 1/3 cup fresh parsley, chopped (for coating)
- 1/3 cup roasted red peppers, finely chopped (for coating)
- 1/4 cup shaved or grated Parmesan (for coating)
Instructions
- In a large bowl, combine softened cream cheese, roasted red peppers, Parmesan, olives, sun-dried tomatoes, green onions, Italian seasoning, garlic powder, and black pepper.
- Mix until all ingredients are fully incorporated.
- Place the mixture onto a sheet of plastic wrap and shape into a log.
- In a shallow dish, combine parsley, additional roasted red peppers, and Parmesan.
- Roll the cream cheese log in the mixture until fully coated.
- Wrap tightly in plastic wrap and refrigerate for at least 1 hour to firm up.
- Serve with crackers, toasted baguette slices, or fresh veggies.
