Ingredients

  • 16 oz cream cheese, softened
  • 1/2 cup roasted red peppers, finely chopped
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup green olives, finely chopped
  • 1/4 cup black olives, finely chopped
  • 1/4 cup sun-dried tomatoes, finely chopped
  • 2 green onions, finely sliced
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/3 cup fresh parsley, chopped (for coating)
  • 1/3 cup roasted red peppers, finely chopped (for coating)
  • 1/4 cup shaved or grated Parmesan (for coating)


Instructions

  1. In a large bowl, combine softened cream cheese, roasted red peppers, Parmesan, olives, sun-dried tomatoes, green onions, Italian seasoning, garlic powder, and black pepper.
  2. Mix until all ingredients are fully incorporated.
  3. Place the mixture onto a sheet of plastic wrap and shape into a log.
  4. In a shallow dish, combine parsley, additional roasted red peppers, and Parmesan.
  5. Roll the cream cheese log in the mixture until fully coated.
  6. Wrap tightly in plastic wrap and refrigerate for at least 1 hour to firm up.
  7. Serve with crackers, toasted baguette slices, or fresh veggies.
