Ingredients

  • 12 oz spaghetti
  • 1 1/2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 3 tablespoons butter (divided)
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)


Instructions

  1. Cook spaghetti according to package directions in salted water until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil and 1 tablespoon butter over medium heat. Add chicken, season with salt, pepper, and Italian seasoning, and cook for 6–8 minutes until golden and cooked through. Remove and set aside.
  3. In the same skillet, melt the remaining 2 tablespoons of butter. Add minced garlic and sauté for 1 minute until fragrant.
  4. Whisk in flour and cook for 1 minute to form a roux. Gradually add milk and heavy cream while whisking continuously until smooth and thickened (about 3–4 minutes).
  5. Reduce heat to low and stir in Parmesan, mozzarella, and cheddar cheeses until melted and creamy.
  6. Return the cooked chicken to the skillet and toss to coat in the sauce.
  7. Add cooked spaghetti and toss until well combined, ensuring the pasta is fully coated in the cheesy garlic butter sauce.
  8. Garnish with fresh parsley and serve warm.
