Description
Garlic Butter Chicken Spaghetti in Cheesy Three-Cheese Sauce is a rich, creamy pasta dish featuring tender chicken tossed in a velvety garlic butter sauce with a blend of mozzarella, parmesan, and cheddar. It’s a comforting, restaurant-quality meal perfect for weeknights or special occasions.
Ingredients
- 12 oz spaghetti
- 1 1/2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 3 tablespoons butter (divided)
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons all-purpose flour
- 1 1/2 cups milk
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Cook spaghetti according to package directions in salted water until al dente. Drain and set aside.
- In a large skillet, heat olive oil and 1 tablespoon butter over medium heat. Add chicken, season with salt, pepper, and Italian seasoning, and cook for 6–8 minutes until golden and cooked through. Remove and set aside.
- In the same skillet, melt the remaining 2 tablespoons of butter. Add minced garlic and sauté for 1 minute until fragrant.
- Whisk in flour and cook for 1 minute to form a roux. Gradually add milk and heavy cream while whisking continuously until smooth and thickened (about 3–4 minutes).
- Reduce heat to low and stir in Parmesan, mozzarella, and cheddar cheeses until melted and creamy.
- Return the cooked chicken to the skillet and toss to coat in the sauce.
- Add cooked spaghetti and toss until well combined, ensuring the pasta is fully coated in the cheesy garlic butter sauce.
- Garnish with fresh parsley and serve warm.
Notes
- For a smoky twist, add a pinch of paprika or crushed red pepper flakes.
- You can substitute penne or fettuccine for spaghetti.
- Use freshly grated cheeses for the smoothest, creamiest sauce.
- Leftovers reheat best on the stove with a splash of milk or cream.
