Description

Garlic Butter Steak with Rigatoni is a rich and flavorful pasta dish featuring tender seared steak bites tossed in a creamy garlic butter sauce with rigatoni pasta.


Ingredients

  • 12 oz rigatoni pasta
  • 1 lb sirloin steak (cut into bite-sized pieces)
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 5 garlic cloves, minced
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup beef broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Cook rigatoni according to package instructions until al dente. Drain and set aside, reserving 1/2 cup pasta water.
  2. Season steak pieces with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Sear steak pieces for 2–3 minutes per side until browned but still juicy. Remove from skillet and set aside.
  4. In the same skillet, melt butter. Add minced garlic and red pepper flakes, sautéing until fragrant, about 1 minute.
  5. Pour in beef broth and heavy cream. Bring to a simmer and stir in Parmesan cheese until sauce thickens slightly.
  6. Add cooked rigatoni to the sauce, tossing to coat. If sauce is too thick, add reserved pasta water as needed.
  7. Return steak to the skillet and toss everything together. Adjust seasoning with more salt and pepper if needed.
  8. Garnish with fresh parsley and serve warm.

Notes

  • For extra flavor, marinate the steak in garlic and herbs before cooking.
  • Ribeye or New York strip can be used for a richer taste.
  • Can substitute penne or ziti if rigatoni is not available.
