Description

Garlic Parmesan Chicken and Potatoes is a flavorful one-pan meal made with juicy chicken, crispy potatoes, and a savory garlic-parmesan seasoning. Perfect for busy weeknights or family dinners.


Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 1/2 lbs baby potatoes, halved
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp unsalted butter, melted
  • 2 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish or sheet pan.
  2. In a large bowl, combine olive oil, garlic, Parmesan, Italian seasoning, paprika, salt, and pepper.
  3. Add chicken and potatoes to the bowl and toss until evenly coated.
  4. Arrange chicken and potatoes in a single layer on the baking sheet. Drizzle with melted butter.
  5. Bake for 35–40 minutes, flipping potatoes halfway through, until chicken is cooked through (165°F) and potatoes are golden and crispy.
  6. Remove from oven, sprinkle with fresh parsley, and serve warm.

Notes

  • Use bone-in chicken for extra flavor, but adjust cooking time.
  • For crispier potatoes, broil for 2–3 minutes at the end.
