Ingredients
- 4 boneless, skinless chicken breasts (or thighs)
- 1 1/2 lbs baby potatoes, halved
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp unsalted butter, melted
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a baking dish or sheet pan.
- In a large bowl, combine olive oil, garlic, Parmesan, Italian seasoning, paprika, salt, and pepper.
- Add chicken and potatoes to the bowl and toss until evenly coated.
- Arrange chicken and potatoes in a single layer on the baking sheet. Drizzle with melted butter.
- Bake for 35–40 minutes, flipping potatoes halfway through, until chicken is cooked through (165°F) and potatoes are golden and crispy.
- Remove from oven, sprinkle with fresh parsley, and serve warm.
Notes
- Use bone-in chicken for extra flavor, but adjust cooking time.
- For crispier potatoes, broil for 2–3 minutes at the end.
- Serve with a side salad or steamed vegetables for a complete meal.
