Description

A tender, flavorful chicken meatloaf infused with garlic, Parmesan cheese, and herbs, baked until golden and juicy for a lighter twist on classic meatloaf.


Ingredients

  • 1 1/2 lbs ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup milk
  • 2 large eggs
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 1/4 cup shredded mozzarella (optional, for extra moisture)
  • 2 tbsp melted butter (for brushing)
  • 2 tbsp grated Parmesan (for topping)


Instructions

  1. Preheat oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease it.
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan, milk, eggs, garlic, onion, Italian seasoning, salt, pepper, and parsley.
  3. Mix gently until just combined—avoid overmixing to keep it tender.
  4. Transfer mixture to the loaf pan and press lightly to shape.
  5. Brush the top with melted butter and sprinkle with additional Parmesan.
  6. Bake for 45–55 minutes, or until internal temperature reaches 165°F (74°C).
  7. Let the meatloaf rest for 10 minutes before slicing to retain juices.

Notes

  • Add shredded mozzarella to keep the meatloaf extra moist.
  • Ground turkey can be substituted for ground chicken.
  • Serve with mashed potatoes, salad, or roasted vegetables.
  • Leftovers reheat well and can be used in sandwiches.
