Description
A tender, flavorful chicken meatloaf infused with garlic, Parmesan cheese, and herbs, baked until golden and juicy for a lighter twist on classic meatloaf.
Ingredients
- 1 1/2 lbs ground chicken
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/3 cup milk
- 2 large eggs
- 4 cloves garlic, minced
- 1 small onion, finely chopped
- 1 tbsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp fresh parsley, chopped
- 1/4 cup shredded mozzarella (optional, for extra moisture)
- 2 tbsp melted butter (for brushing)
- 2 tbsp grated Parmesan (for topping)
Instructions
- Preheat oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease it.
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan, milk, eggs, garlic, onion, Italian seasoning, salt, pepper, and parsley.
- Mix gently until just combined—avoid overmixing to keep it tender.
- Transfer mixture to the loaf pan and press lightly to shape.
- Brush the top with melted butter and sprinkle with additional Parmesan.
- Bake for 45–55 minutes, or until internal temperature reaches 165°F (74°C).
- Let the meatloaf rest for 10 minutes before slicing to retain juices.
Notes
- Add shredded mozzarella to keep the meatloaf extra moist.
- Ground turkey can be substituted for ground chicken.
- Serve with mashed potatoes, salad, or roasted vegetables.
- Leftovers reheat well and can be used in sandwiches.
