Description

Garlic Parmesan Chicken Meatloaf is a flavorful twist on a classic comfort dish, made with ground chicken, Parmesan cheese, garlic, and Italian herbs. It’s juicy, tender, and perfectly seasoned — a lighter, protein-packed version of traditional meatloaf that the whole family will love.


Ingredients

  • 1 1/2 lbs ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/3 cup milk
  • 1 large egg
  • 3 cloves garlic, minced
  • 1/2 small onion, finely diced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped parsley
  • 2 tbsp butter (melted)
  • 1/4 cup additional shredded Parmesan (for topping)
  • 1 tbsp olive oil (for greasing pan)


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a loaf pan with olive oil or line it with parchment paper.
  2. In a large mixing bowl, combine ground chicken, breadcrumbs, Parmesan, mozzarella, milk, egg, garlic, onion, Italian seasoning, salt, pepper, and parsley. Mix until just combined — do not overmix.
  3. Transfer the mixture to the prepared loaf pan and shape it into an even loaf.
  4. Brush the top with melted butter and sprinkle with extra Parmesan cheese.
  5. Bake uncovered for 40–45 minutes, or until the internal temperature reaches 165°F (74°C) and the top is golden.
  6. Let rest for 5–10 minutes before slicing to keep it moist.
  7. Garnish with more parsley and serve with mashed potatoes, roasted vegetables, or a side salad.

  • Add a layer of marinara sauce on top for an Italian-inspired flavor.
