Garlic Parmesan Chicken Meatloaf is a flavorful twist on a classic comfort dish, made with ground chicken, Parmesan cheese, garlic, and Italian herbs. It’s juicy, tender, and perfectly seasoned — a lighter, protein-packed version of traditional meatloaf that the whole family will love.
Ingredients
- 1 1/2 lbs ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1/3 cup milk
- 1 large egg
- 3 cloves garlic, minced
- 1/2 small onion, finely diced
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp chopped parsley
- 2 tbsp butter (melted)
- 1/4 cup additional shredded Parmesan (for topping)
- 1 tbsp olive oil (for greasing pan)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a loaf pan with olive oil or line it with parchment paper.
- In a large mixing bowl, combine ground chicken, breadcrumbs, Parmesan, mozzarella, milk, egg, garlic, onion, Italian seasoning, salt, pepper, and parsley. Mix until just combined — do not overmix.
- Transfer the mixture to the prepared loaf pan and shape it into an even loaf.
- Brush the top with melted butter and sprinkle with extra Parmesan cheese.
- Bake uncovered for 40–45 minutes, or until the internal temperature reaches 165°F (74°C) and the top is golden.
- Let rest for 5–10 minutes before slicing to keep it moist.
- Garnish with more parsley and serve with mashed potatoes, roasted vegetables, or a side salad.
Notes
- Add a layer of marinara sauce on top for an Italian-inspired flavor.
- Substitute ground turkey for a similar result.
- Mix in spinach or finely chopped zucchini for extra moisture and nutrition.
