- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon ground cinnamon (optional)
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a mixing bowl, combine mashed bananas and melted butter.
- Stir in sugar, beaten egg, and vanilla extract.
- Add baking soda, salt, and cinnamon. Mix until combined.
- Gently fold in flour, mixing just until no streaks remain.
- Stir in nuts if using.

- Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Extra-ripe bananas with brown spots give the best flavor and moisture.
- Do not overmix the batter or the bread may become dense.
- Add chocolate chips for a sweeter variation.
- Banana bread freezes well—wrap tightly and freeze up to 3 months.
