Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 3 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)


Instructions

  1. In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, and pepper.
  2. Place chicken in a shallow dish or zip-top bag. Pour marinade over chicken, cover, and refrigerate for at least 30 minutes (up to 4 hours).
  3. Preheat oven to 400°F (200°C). Heat a large oven-safe skillet over medium-high heat.
  4. Sear chicken for 2-3 minutes per side until golden brown.
  5. Pour chicken broth into skillet, then transfer to the oven. Bake for 15-20 minutes, or until chicken reaches 165°F (74°C).
  6. Remove from oven, sprinkle with crumbled feta cheese, and let rest for 5 minutes.
  7. Garnish with parsley and lemon wedges. Serve with rice, potatoes, or a fresh salad.
