Description

A gourmet twist on the classic grilled cheese sandwich, layered with sweet caramelized onions and gooey melted cheese for a rich, comforting bite.


Ingredients

  • 4 slices sourdough or rustic bread
  • 2 tablespoons butter (softened)
  • 1 tablespoon olive oil
  • 2 medium onions, thinly sliced
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 slices sharp cheddar cheese (or Gruyère)
  • Optional: fresh thyme leaves for extra flavor


Instructions

  1. Heat olive oil in a skillet over medium-low heat. Add sliced onions, sugar, salt, and pepper. Cook slowly, stirring occasionally, until onions are golden brown and caramelized (about 20–25 minutes). Set aside.
  2. Butter one side of each bread slice.
  3. Place 2 slices of bread buttered side down in a skillet over medium heat. Top each with cheese slices and a generous layer of caramelized onions.
  4. Place the remaining bread slices on top, buttered side up.
  5. Cook until the bottom bread is golden and cheese begins to melt, about 3–4 minutes. Flip carefully and cook another 3–4 minutes until cheese is fully melted and bread is golden brown.
  6. Remove from heat, slice in half, and serve warm.

Notes

  • Use a mix of cheeses (Gruyère, provolone, mozzarella) for a more complex flavor.
  • Make onions ahead of time and store in the fridge for quick assembly.
  • Add a slice of tomato or cooked bacon for variation.
