Hearty Beef Roast Delight is a comforting and savory dish made with tender, slow-roasted beef, hearty vegetables, and rich pan juices. Perfect for Sunday dinners or special family gatherings.
Ingredients
- 3–4 lb beef chuck roast
- 2 tbsp olive oil
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 medium onion, quartered
- 4 cloves garlic, smashed
- 4 large carrots, cut into chunks
- 3 medium potatoes, cut into large chunks
- 2 cups beef broth
- 1 cup red wine (optional, can substitute with more broth)
- 2 tbsp tomato paste
- 2 bay leaves
Instructions
- Preheat oven to 325°F (165°C).
- Season beef roast with salt, pepper, garlic powder, onion powder, thyme, and rosemary.
- In a large Dutch oven, heat olive oil over medium-high heat. Sear roast on all sides until browned.
- Add onion, garlic, carrots, and potatoes around the roast.
- In a bowl, whisk together beef broth, red wine, and tomato paste. Pour mixture over roast.
- Add bay leaves, then cover Dutch oven with lid.
- Bake for 3–3.5 hours, or until beef is fork-tender.
- Remove bay leaves before serving. Slice roast and serve with vegetables and pan juices.
Notes
- For extra flavor, marinate the beef overnight in garlic, herbs, and olive oil.
- Can also be made in a slow cooker on low for 8 hours.
- Serve with crusty bread to soak up the savory juices.
